Pumpkin Protein Bites

INGREDIENTS:

  • 1 cup oats

  • 1/2 cup pumpkin puree

  • 1/4 cup nut butter (almond or peanut)

  • 2–3 tbsp maple syrup or honey

  • 1 tsp pumpkin pie spice

    • Make your own! 3T cinnamon, 2t nutmeg, 2t ginger, 1.5t all spice, 1.5t cloves

  • 1/4 cup mini dark chocolate chips or cacao nibs

Optional: 1–2 scoops vanilla protein powder (adjust for desired texture)

DIRECTIONS:

  1. Mix all ingredients in a bowl. If the mixture feels too dry with protein powder, add a splash of milk (dairy or plant-based) until it holds together.

  2. Roll into bite-sized balls.

  3. Chill 30–60 minutes in the fridge.

  4. Optional: Decorate with chocolate chips or raisins for “monster eyes.”

Tips:

  • Store in an airtight container in the fridge for up to a week.

  • Great as a post-workout snack or healthy Halloween treat.
